The European standard EN-631 sets under the term Gastronorm (GN) the standard format for containers used in the treatment of food in professional kitchens, in any of its processes: preparation – cooking – storage – conservation – transport – cleaning. This standardization allows to optimize the management and maximum utilization of space in the kitchen, transport and storage equipment: shelves of storage, carts, cabinets, ovens, refrigerators, buffet
The basic format is the GN 1/1: 530 x 325 mm. Others are fractions or multiples of that size, resulting in this list:
GN1/1: 530 × 325 mm
GN1/2: 325 × 265 mm
GN1/3: 325 × 176 mm
GN1/4: 265 × 162 mm
GN1/6: 176 × 162 mm
GN1/9: 108 × 176 mm
GN2/1: 650 × 530 mm
GN2/3: 354 × 325 mm
GN2/4: 156 x 530 mm
In addition to length and width, Gastronorm also establishes standard depths: 10, 20, 40, 65, 100, 150 and 200 mm (and therefore the capabilities of vessels)
